A Well-Prepared Half a Loaf Is Better than Almost Anything

This is something like French toast, only not insipid.

In a large, heavy-bottomed frying pan sauté a sliced onion and some truffles in olive oil. Add about half a loaf of cubed, very stale rye loaf bread. Add enough mustard powder to change the color of the bread. Add some oregano. Stir in a desultory fashion.

Beat four or five eggs just enough that they're broken down, but not homogenized for fuck's sake. Place several large handfuls of sliced, very clean spinach on top of your slop in the frying pan. The pan will be starting to dry out a little bit, so pour some cooking wine onto the bottom of the pan. As the wine starts to steam, immediately pour the egg mixture on top of everything, and then stir it around a little bit, making sure each piece of bread gets wet. Add dried Parmesan cheese liberally, stir, and then cover with a lid for about two minutes.

Remove from heat and gently stir. Add salt and coarse black pepper. Feel proud you saved that loaf of bread from the trash.
